VEGAN PUMPKIN ALFREDO 🎃
over the past weeks, my mom and I have inadvertently hoarded a number of cans of pumpkin purée (tragic, I know 😅) from purchasing a few each time we’re at the store, so putting some of it to good use for this simple, quick and DELICIOUS sauce! It’s safe to say it’ll be on repeat for the next few weeks, at least!

(makes about 3-4 servings):
•1/2 cup pumpkin purée
•1 and 1/2 cups milk (I used almond)
•2 tbsp olive oil
•the juice of half a lemon
•4 cloves of garlic, minced
•4 tbsp nutritional yeast
•1 tsp sea salt
•sprinkle of black pepper
-add all ingredients to a blender! once nicely combined, heat it up on the stovetop and pair with your favorite pasta – mine currently is @chickapeapasta for the added protein bonus! topped with some fresh basil and hemp seeds!
