no-bake pumpkin fudge balls 🎃💕
September and the cooler temps have got me excited for all things fall – including ALL the pumpkin goodies 😅 is it to early? maybe. is that stopping me? NOPE!
I found this recipe from @chocolatecoveredkatie’s website and I can’t recommend it enough. these balls were so simple to make, required minimal ingredients, and also happens to be and the perfect sweet treat to pair with my afternoon matcha, or to crumble over my evening yogurt bowls ❤️

pumpkin fudge balls (recipe is by @chocolatecoveredkatie!)
•1/4 cup pumpkin purée
•6 tbsp coconut butter (melted completely)
•2 tbsp maple syrup
•1/4 tsp vanilla extract
•sprinkle of cinnamon
•pinch of sea salt
•dark chocolate to drizzle/coat (optional, but highly recommended)
Instructions: combine all ingredients (except the chocolate) in a bowl. mix and let it sit in the fridge for 30 minutes. then, roll into balls (it gave me about 8) then drizzle/coat them in the melted chocolate. place in freezer to set and ENJOY!
