happy monday, my friends! sharing this gorgeously cozy salad I made over the weekend 🤗 I finally roasted up the cutest little honey nut squash I bought from Whole Foods, and WOW. I think I’ve found my new favorite squash (aside from delicata, of course)! the honey nut squash has a bit more flavor and is definitely sweeter than the average butternut variety!
I’ve got quite a bit to tackle on my to-do list for the day, but I had a gorgeous morning walk, the sun is shining, and we’re going to make this a great day! ❤️

arugula, @lovebeets beets, fresh figs, roasted honey nut squash (sliced and cubes, then drizzled in @chosenfoods avocado oil and sprinkled with sea salt and baked at 425F for 25 minutes), avocado chunks, feta, hemp seeds and a drizzle of olive oil and balsamic vinegar
