acorn squash egg-in-a-hole 🍳💕
whipped up this simple, cozy and festive breakfast idea before diving into my work for the day 🤗 such a fun take on my usual “bell pepper egg nests”!
acorn squash is one of my favorite squash varieties – it’s slightly sweet and packed with a host of vitamins, minerals and fiber!

•wash and slice squash into 1/2-3/4 inch slices, and remove the inner seeds with a fork
•coat squash with some @chosenfoods avocado oil and sea salt, and bake at 420F for 15 minutes
•remove from oven, and crack an egg into the center of the squash slice
•reduce oven temp. to 350F, and bake for 10-15 minutes (until the whites are set)
•sprinkle with red pepper flakes and chopped basil, and served with some avo toast on the side, and ENJOY!
